I’m Nicole, daughter of the King, wife to my best friend Joe and mama to my two year old Caleb and fur babies Modena and Tinsley. Also, I love to cook. During the summers when I was young, my Mom would let us fix a meal for the family once a week. I got to plan, shop and cook. It fulfilled me! Cooking is a passion, outlet, and joy still to this day!
Now as a Wife, Mom and small business owner, I have a deeper passion for cooking---my family. I want to feed them the best possible meals on our budget and their palates.
My challenges include, our toddler who has days he will eat anything and days I think he must be starving, and my husband who works a job that is physical, so I am always looking for ways to keep him fueled.
I make decisions all day long for my family, self or my business, but the best decision I can make is what to feed my family, it impacts them for a lifetime. So, I am always experimenting, ways to please my gang and aim for healthy. Fun fact, I also make my pups food!
I am so excited to share this space with you all, and to help you all find tools and tricks to cook healthy meals on a budget that nourish and care for your body. I believe it does not have to be fancy or a lot of work, but whether you are a busy mom, college student, young professional or a seasoned one you can fuel your body well with the time you have.
A family favorite recipe came about after our son was born. I found less time to cook, but also found myself hungry, or in my case “hangry”. (Hungry and angry at the same time). So, I would whip up a batch of Energy Balls to eat as a snack. This was seriously my favorite late-night snack when I was breastfeeding our son.
- 1 cup natural peanut butter (the goal is two ingredients peanuts and salt)
- 2 cups gluten free granola (Purely Elizabeth Granola)
- 1 scoop protein powder (Primal Kitchen Collagen Fuel)
- 1/3 cup shredded coconut (unsweetened)
- 3 tablespoons pure honey
- ½ cup small chocolate chips (I use enjoy life or dark chocolate fair trade chips)
- 3 tablespoons ground flax
- ½ cup of gluten free oats
Mix all ingredients together in a large bowl, cover and let sit in the fridge for 1 hour. Use a large spoon to scoop out the mixture and roll into 1-inch balls. Store in an airtight container and layer them between parchment paper to fill up the container. Store your bites in the refrigerator.
